- 1 red tilapia (or grouper)
- 1 mango - stripped
- some chopped spring onion
- 10 g carrot strips
- 3 bird's eye chillies - chopped
- 15g fried peanuts
- 10g dried shrimps - fried
- oil for frying
- 1 tbsp cornstarch
- 1 tsp chicken stock granules
- Dash of salt
- 1 tbsp rice wine
- 1 tsp soy sauce
- 1 tsp fish sauce
- 3 tbsp Thai chilli sauce
* METHOD
- Clean the read tilapia, set aside.
- Season the fish with rice wine and soy sauce for 1/2 hour. then coat with cornstarch, deep fry in hot oil until golden brown, set aside.
- combine mango strips, carrot strips, chopped spring onion. chopped bird's eyes chillies, shrimps, fish sauce, chicken stock granules, salt and thai granules, salt and tlis.
- arrange on top of the fried fish, sprinkle with fried peanuts.
