* INGREDIENTS
- 500g fish fillets ( grouper or dory fish)
- 2 salted egg yolks
- 1 tbsp butter
- 1/2 tsp pepper powder
- 1 tsp sesame oil
- Dash of salt
- 2 tbsp cornstarch
* METHOD
1. Steam the salted egg yolks for 15 minutes till cooked, mashed and set aside.
2. Rinse the fish fillets, wipe dry, cut into pieces.
3. Season the fish fillets with pepper powder, sesame oil, salt and cornstarch for 10 minutes.
4. Heat oil, deep fry the fish to a crisp golden brown colour, remove and drain well.
5. Melt the butter in wok, add in the mashed salted egg yolk, stir fry until the egg yolk dissolves.
6. Place in the fried fish fillets, stir fry well, dish out and serve.
