- 400g shark fillet (or mackerel, kurau)
- pandan leaves - washed and wipe dry
- oil for frying
* MARINADE
- 3 cloves garlic
- 3 shallots
- 2 stalks chinese celery (leaves and steam)
- 1 tbsp oyster sauce
- 1 tbsp fish sauce
- 1/2 tsp sesame oil
- 1/2 tsp sugar
* METHOD
- Cut shark fillet into bite-size pieces.
- combine 3 cloves garlic, 3 shallots, 2 stalks chinese celery, 1 tbsp oyster sauce, 1 tbsp fish sauce, 1/2 tsp sesame oil, 1/2 tsp sugar and mix well with shark fillet, marinate for 1 hour.
- Fold pandan leaves into pockets, fill each pocket with marinated shark fillet, fold over and seal well.
- Deep fry pandan fish for 10 minutes, drain and serve.
