- 400g fish fillet (dory or grouper)
- 1/2 tsp salt
- 1 tsp cooking wine
- 1/2 tsp pepper powder
- 1 tsp wasabi
- 2 tbsp mayonnaise
- Thousand Island Dressing
- 150 g self raising flour
- 3 tbsp cooking oil
- 200 ml water
- Dash of pepper and salt

- Sieve flour, salt & pepper in a bowl, make a well in the center.
- Add in oil, then add water gradually, mix till mixture is smooth and free from lumps.
* METHOD
- Season the fish fillet with salt, cooking wine and pepper powder for 10 minutes.
- Dip the fish in the batter, deep fry in hot oil until golden brown, remove and drain, arrange on a serving plate, garnish with thousand island dressing.
- Combine the wasabi and mayonnaise, serve with fry fish fillet.
