Beer Fish Stew :
* INGREDIENTS
- 1/2 can of beer
- 1 fish ( red snapper, grouper, threadfin)
- 2 stalks of spring onion - sectioned
- 5 pcs ginger
8 cloves garlic
- 2 dried chillies
- 1 tbsp spicy bean paste
- 1/2 tsp sugar
* METHOD
1. Heat 2 tbsp of oil in wok, shallow fry the fish on both sides until golden brown, remove and set aside.
2. Saute spicy bean paste, dried chillies, spring onion, ginger and garlic until fragrant.
3. Place in the fish, pour in the beer and add in sugar.
4. Bring to the boil over high heat, then reduce to low heat until the gravy thickens. Ready to serve.
(Garnish with chopped red chillies and spring onion as needed.
