- 1 threadfin (approx 500g)
- 50g Kimchi
- 1 red chilli - chopped
- 1 tsp chopped ginger
- 1 tsp chopped garlic
- 2 tbsp cooking wine
- 1 tbsp soy sauce
- 1 tsp vinegar
- 1/2 tsp sugar
- Pich of salt
- 500ml stock
- oil for frying
- Corn flour solution as needed.
* METHOD
1. Clean the fish, wipe dry, make 2 slits on both sides.
2. Drain the kimchi, cut into strips.
3. Heat oil, deep fry the fish for 2 minutes.
4. Leave 3 tbsp of oil in wok, saute chopped chillies, ginger, shallots and garlic, add in cookinh wine.
5. Add in the stock, soy sauce and kimchi, bring to a boil.
6. Place in the fried fish, cook for 6 minutes.
7. Remove the fish and arrange on a serving plate. Leave the sauce in wok.
9. Pour over the fish, sprinkle coriander leaves or chopped onion on top as needed.
