Mango Fish

* INGREDIENTS

- 1 red tilapia (or grouper)
- 1 mango - stripped
- some chopped spring onion
- 10 g carrot strips
- 3 bird's eye chillies - chopped
- 15g fried peanuts
- 10g dried shrimps - fried
-  oil for frying
- 1 tbsp cornstarch
- 1 tsp chicken stock granules
- Dash of salt
- 1 tbsp rice wine
- 1 tsp soy sauce
- 1 tsp fish sauce
- 3 tbsp Thai chilli sauce

* METHOD
  1. Clean the read tilapia, set aside.
  2. Season the fish with rice wine and soy sauce for 1/2 hour. then coat with cornstarch, deep fry in hot oil until golden brown, set aside.
  3. combine mango strips, carrot strips, chopped spring onion. chopped  bird's eyes chillies, shrimps, fish sauce, chicken stock granules, salt and thai granules, salt and tlis.
  4. arrange on top of the fried fish, sprinkle with fried peanuts.
